Happy Mother's Day

A Mother's Love

A Mother's love is something
that no one can explain,
It is made of deep devotion
and of sacrifice and pain,
It is endless and unselfish
and enduring come what may
For nothing can destroy it
or take that love away . . .
It is patient and forgiving
when all others are forsaking,
And it never fails or falters
even though the heart is breaking . . .
It believes beyond believing
when the world around condemns,
And it glows with all the beauty
of the rarest, brightest gems . . .
It is far beyond defining,
it defies all explanation,
And it still remains a secret
like the mysteries of creation . . .
A many splendoured miracle
man cannot understand
And another wondrous evidence
of God's tender guiding hand.

Calories for April 15th

I am going to start keeping track of my calorie and water intake per day. I am doing the 30 day shred and biking so I can get back in shape.

16 oz glass of water at break
Banana for break 105 calories
16 oz glass of water at lunch
Banana and a cutie orange for lunch 105 calories for b and 80 calories for c

Fat free Vegan Carrot Cake and Taco Salad that my family loves.

Fat Free Vegan Carrot Cake (makes one 4-5 inch high 10 inch bundt cake)
Wet ingredients:
2 Cups packed finely grated carrots
1 & 1/2 cups packed Brown Sugar (we use sucanat)
1 & 3/4 cups water
1-cup raisins
1 tsp vanilla
Dry ingredients:
3 cups unbleached white flour
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/14 tsp cloves
1 tsp salt
1 tsp baking soda
2 tsp baking powder
Optional additional ingredients: 1-cup nuts (we put in chopped walnuts)

Directions:
(Do this part ahead of time) Combine the wet ingredients in a saucepan and bring to a boil. Simmer for 5 minutes, cover, and let the mixture sit for at least an hour. But overnight is best. The mixture will stay fairly thin.
When the allotted time has past, preheat the oven to 300 F and generously oil and flour a 10-inch bundt pan. Combine the dry ingredients in a large mixing bowl. Add the cooled carrot mixture and stir/ford gently only until no trace of flour is left. Fold in any optional ingredients if you want to add some. Pour batter into the prepared pan, and bake for 1 hour or until the cake is firm to the touch and a probe comes out clean. Cool in the pan on a rack for 10 minutes, and then invert onto serving plate.
For the top: Lemon glaze (after cake is baked)
1/2-cup sugar (gain we use sucanat)
1/4-cup fresh lemon juice
Combine in a saucepan and heat until the sugar dissolves. That's it!
If you like, poke holes in the top of the cake with a toothpick or a sharp knife before you slowly pour the glaze over the top. That way more of the glaze can seep down into the cake.
If you are making muffins time will be 30 minutes at 300 F.

TACO SALAD

1 lb ground beef
1 envelope taco seasoning
1 head lettuce, shredded
1 12 oz pkg. shredded cheddar cheese
1 12 oz bag nacho cheese flavored Doritos, crushed
1 16 oz. French Dressing
Brown ground beef and add taco seasoning. Simmer according to directions.
Place in large bowl and refrigerate until cool. lettuce, cheese, and Doritos. Mix well.
Cover with salad dressing. Mix again. Serve almost immediately.

Christ Resurrection

Matt 28:5-6 And the angel answered and said unto the women, Fear not ye: for I know that ye seek Jesus, which was crucified.

Matt 28:6 He is not here: for he is risen, as he said. Come, see the place where the Lord lay.

Easter is a holiday when most people think of the Easter bunny, decorating eggs, dressing up in your best Sunday outfit and going to church.

Easter should be more than just another holiday to a Christian. It's the Sunday set aside to recognize the resurrection of our Lord Jesus Christ. GOD sent his WORD in the form of a child, being born to Mary the Virgin as God's only Begotten Son. He lived a very short time on earth, having been a carpenter and then God's messenger the last three years or so of his life. He was crucified, nailing all our sins to the cross, covering them with his precious blood. If we believe on him, accept his free gift of salvation, then we too will see him in all his Glory one day!

Jesus was compelled to bear his own cross, to travel to Golgotha, where they placed upon his head a crown of thorns and proclaimed him "THIS IS JESUS THE KING OF THE JEWS!". They placed him between two thieves hanging on a cross, drove nails through his hands and feet, later piercing his side to make sure he was dead. They took his garments to draw lots to see who would get them.

Mark 15:33 And when the sixth hour was come, there was darkness over the whole land until the ninth hour.

Mark 15:34 And at the ninth hour Jesus cried with a loud voice, saying, My God, my God, why hast thou forsaken me? "

He was mocked and given vinegar to drink instead of water.

John 19:28 After this, Jesus knowing that all things were now accomplished, that the scripture might be fulfilled, saith, I thirst.

John 19:30 When Jesus therefore had received the vinegar, he said, It is finished: and he bowed his head, and gave up the ghost.

Mark 16:6 And he saith unto them, Be not affrighted: Ye seek Jesus of Nazareth, which was crucified: he is risen; he is not here: behold the place where they laid him.

They came to see His body in the tomb

I came home Thursday to these beautiful spring flowers, a teddy bear and a box of candy. My dear hubby said it was just because he loves me. He sent the sweetest note with the gifts.
He wrote,
I love the way your eyes captivate my soul. ...
How your smile lights a room.
The sound of your laughter. The joy you have in our kids and grandkids. The world is a better place and I am a better man because of you.

Thank you my love,
Your Hubby
That is so very sweet. I can truly say I had a lump in my throat that I had to hold back. 29 years and he still loves me that much.
